Chicken Chaufa Rice With Ham

Arroz chaufa de pollo con jamón is one of the Peruvian varieties of Chinese rice. This traditional dish of oriental origin consists of a cooked rice sautéed in a wok, with vegetables, an omelette, meats, soy sauce and oil.

Likewise, the Peruvian version adds ginger and has different versions: with beef, pork, wild duck, seafood, alligator, among others. This time we want to share the recipe for  arroz chaufa de pollo con jamón.

Option 1: Chicken chaufa rice with ham

This delicious fried chicken rice with ham puts on your table a delicious dish of Peruvian cuisine. It is perfect to enjoy at lunch or on a special occasion. Follow the steps in our recipe.

Ingredients

  • 1 tablespoon of oil (20 ml)
  • Chicken breast in small cubes (150 g)
  • Turkey ham in small cubes (150 g)
  • Pork in pieces (150 g)
  • 1 tablespoon of sesame oil (20 ml)
  • 1 tablespoon of Chinese onion (white part) (15 g)
  • 6 tablespoon of Chinese onion (green part) (90 g)
  • ½ tablespoon of grated kion (5 g)
  • 4 eggs
  • 1 teaspoon of butter (7 g)
  • 6 cups cooked rice (1200 g)
  • ½ cup soy
  • Salt and pepper

Process

Cantonese rice

  • To start, heat the oil over medium heat in a skillet and sauté the chicken, turkey and pork for six minutes.
  • Next, add the sesame oil and season with salt and pepper.
  • Pour in the white part of the finely chopped Chinese onion and the kion. Stir until the ingredients start to smell. Remove from the heat and let it rest.
  • In a separate bowl, beat the eggs and add salt and pepper.
  • Melt the butter over medium heat in a skillet. Pour in the beaten eggs and cook for three minutes. Flip it over with a spatula, remove it from the heat and cut it into squares.
  • Then, bring the reserved pan with the meats back to the fire. Add the cooked rice and mix it well with all the ingredients.
  • Add the soy sauce little by little and mix until the rice is evenly colored.
  • Add the tortilla and sprinkle with the green part of the Chinese onion.
  • Remove from heat and, of course, serve immediately.

Option 2: Arroz chaufa

If you prefer to vary the previous version of arroz chaufa a bit, you can opt for this preparation that includes bacon and chicken fillet. The steps are similar to the previous ones; just let yourself go. You’ll love it!

Ingredients

  • 2 cups of rice (400 g)
  • Cooked chicken fillet (250 g)
  • 4 slices of fat-free bacon (100 g)
  • 8-10 stalks of Chinese onion
  • ½ red pepper
  • 3 eggs
  • 1 tablespoon of milk (20 ml)
  • 2 teaspoons of ginger (10 g)
  • 1 clove garlic
  • Soy sauce to taste
  • 1 tablespoon of oil (20 ml)
  • Salt and pepper

Process

Chicken rice

  • First, heat 4 cups of salted water. When it boils, add the rice and let it simmer for 15 to 20 minutes, without boiling.
  • Once the said time has elapsed, remove it immediately and put it under a stream of cold water to break the cooking. Reservation.
  • Next, beat the eggs lightly with a tablespoon of milk. Season and make an omelette in a frying pan with oil.
  • When it’s done, remove it from the heat and cut it into 1 cm wide pieces.
  • Also, dice the chicken, bacon, onion, garlic, and bell pepper.
  • Fry the bacon in a nonstick skillet until golden brown but not crisp. Remove it and let it drain on absorbent paper.
  • In the same fat as the bacon, fry the garlic and ginger.
  • Turn up the heat and add the onion and bell pepper. Cook for a few minutes until they soften.
  • Then, add the soy sauce, the chicken and the tortilla in pieces. Mix it all together and add a tablespoon of boiling water if it is too dry.
  • Lastly, add the rice and mix well.
  • Serve hot and immediately.
