For the chocolate cream

  • 150 g chocolate fondant
  • 30 g sugar
  • 2 yolks
  • 200 g cream

For the crunchy:

  • 20 g cocoa powder
  • ¼ glass of milk
  • 50 g flour
  • 50 g sugar

From the chocolate cream:

  • First, melt the previously chopped chocolate in a water bath.
  • Then, once melted, add the slightly hot cream and the previously beaten egg yolks.
  • Then add the sugar and stir the whole mixture continuously over low heat.
  • Finally, when the mixture has thickened, pour it into a long tray and place it in the fridge.

From the pistachio cream:

  • First, boil the cream together with the milk and sugar, taking care that it does not leak.
  • Then, when it starts to boil, remove from the heat, add the mint and pistachios and place the mixture in the blender glass to blend until a fine green cream is obtained.
  • Then put this cream in the fridge as well.

From the crunchy:

  • First, mix all the ingredients in a blender glass and beat until you get a fine cream.
  • Then, with the help of a spoon, form portions with the cream on a sheet of greaseproof paper on a baking tray. Roll out the portions until they are teardrop-shaped.
  • Finally, bake for a few minutes until the edges are golden brown.

Mounting:

  • Simply, in a soup plate, arrange a thin base of pistachio cream, add a tablespoon of chocolate cream in the center and place a crunchy tear on it.
