Onion Sandwich And Caramelised Peppers With Bacon

The bacon or pancetta is a meat that everyone loves. It can be very greasy, but if consumed rarely, it gives a delicious, intense flavor to dishes, especially if it is cooked on the grill or on the grill. This Bacon Caramelized Onion and Bell Pepper Sandwich is the proof.

This simple recipe combines the salty taste of bacon with the sweetness of caramelized onions, the freshness of tomatoes, and the acidity of bell pepper. And then there is the cheese, lots of mozzarella, and a good amount of Parmesan.

Ingredients

  • Bread
  • 1/4 of bacon or bacon
  • Olive oil
  • 6 onions
  • 1 tablespoon of olive oil
  • ¾ teaspoon of salt
  • ½ k cherry tomatoes cut in half
  • ½ of bell peppers cut in julienne
  • ¼ grated mozzarella cheese
  • 3-4 tablespoons grated Parmesan cheese

Cooking the bacon or bacon

In order for the onions and peppers to be perfectly caramelized, it is advisable to use an electric skillet to precisely control the heat. It will take a little over 1 hour to cook them. Put the pan over low heat.

Add 1 tablespoon of the bacon fat from baking and 1 tablespoon of olive oil to the skillet. Next, add half the onion and top with ¼ teaspoon of salt. Make a second layer of the remaining onion and cover the top with ½ teaspoon of salt. Add the julienned peppers. Cover and allow onions and peppers to “sweat” without stirring for 20 minutes.

Mix the onion with the peppers and cover at an angle so the steam can escape. Cook for 40 minutes, stirring every 5 minutes or so until the onions are evenly brown and the peppers are soft in texture.

If the onions are not brown, there is too much liquid in the pan. Liquid evaporates by increasing heat and stirring frequently. Watch for doneness and increase the heat a little higher when onions start to brown.

Onions are done when they are completely brown and soft. Turn off the pan and reserve.

Assemble the onion and pepper sandwich

  • Preheat the oven to 350 degrees.
  • Spread sliced ​​bread on a baking sheet lined with cooking paper.
  • Add to this bread base all the ingredients in this order: mozzarella, caramelized onion, caramelized pepper, bacon or bacon, cherry tomatoes cut in half and finally the Parmesan cheese.
  • Cover all the ingredients with more sliced ​​bread to close the sandwiches.
  • Add more Parmesan cheese to gratin on top, they will be even richer.
