Ingredients

  • 340 grams of large shell-shaped pasta
  • 2 cups shredded mozzarella cheese
  • 1 cup of Parmesan cheese
  • 1 kilo of chicken breast
  • 3 tablespoons olive oil
  • 4 large onions
  • 3 cups of chicken broth
  • 3 garlic cloves
  • 1 cup of white wine
  • 1 tablespoon of brown sugar
  • Salt and pepper

Preparation

For the pasta

  • The first thing you should do is bring enough water to boil to be able to submerge the shells. Add a few drops of oil so that the pastes do not stick and once it is bubbling, add the shells being careful not to splash.
  • Leave them for between 10 and 15 minutes, which is about what it will take to be ready.
  • When the suggested time has passed, remove them from the water and set them apart, separated from each other so that they do not stick.

For the filling

  • In a different container, cut the chicken into strips, also take the opportunity to cut the onion into not very small squares and chop the garlic finely.

  • In the same skillet, add more oil and the onions. Cook over low heat, take the opportunity to add the salt and pepper, and wait for them to become transparent (it will not take more than 15 minutes, also watch that they are not going to burn).
  • Once the onion has crystallized, add the chicken again and add the chicken broth, the white wine and the sugar, stir everything very well. Put the lid on the pot and let everything cook for half an hour over medium heat, don’t forget to stir from time to time.
  • Once this time has passed, you should have a thick mixture as a result, correct the salt and if you wish, add more pepper. Preheat the oven to 180 ° C.
  • Let the mixture cool a bit and proceed to fill each of the shells. At the end, layer them with grated mozzarella cheese and sprinkle with Parmesan cheese. Place your stuffed shells on a baking sheet or in a mold.
  • Take the tray to the oven and leave it there for 10 minutes or as long as it takes for the cheese to brown. When the cheese has reached the consistency you need, remove it from the oven, let it cool for a few minutes and serve the shells accompanied by vegetables and bread.
