Recipes With Broccoli And Pumpkin

Broccoli and pumpkin are two nutritious foods that we should include in our regular diet. In addition, they have a characteristic flavor that can be combined to obtain different and simply delicious dishes.

Ingredients

  • 100 grams of broccoli.
  • 100 squash fallow deer.
  • 50 grams of whole wheat bread.
  • 2 tablespoons of oat milk.
  • Grated cheese for gratin (to taste).
  • Salt and pepper.
  • Lemon zest.

Elaboration

  1. First, we must cut  the pumpkin and broccoli into small pieces. Afterwards, we will wash them well and steam them with little water. Wait for them to be done (they don’t need to be very soft).
  2. Next,  we choose the source where we are going to grill. We will put the vegetables in the bottom with a little salt and pepper, along with a little lemon zest. We will also add the pieces of bread soaked in oat milk, and cheese to taste. Finally, we will take it to the oven to gratin.

Ingredients

  • 1 small broccoli.
  • Half a medium pumpkin.
  • 1/2 cup of almonds (we will soak them the night before).
  • 1/2 teaspoon of cumin.
  • 1 teaspoon of turmeric.
  • Crushed chilli to taste.
  • Juice of half a lemon.
  • 3 tablespoons olive oil.
  • 1/2 teaspoon of coriander.

Elaboration

  1. To start, we cut the broccoli and the pumpkin into small pieces.
  2. Now, we will prepare the dressing with the cumin, the oil, the lemon juice, the chilli and the coriander. We will mix everything well.
  3. Next, in a large frying pan, and with a little oil, we will sauté the broccoli, pumpkin and almonds. Remember that the pieces of pumpkin and broccoli must be small to be done well. Add the chilli, if desired.
  4. After this, we will add the dressing to the pumpkin, broccoli and almonds.
  5. To finish, continue cooking all the vegetables until they are tender and ready. The mixture is very tasty. Serve it in two plates and accompany it with soy sauce,  if it is to your liking.

Wild rice with broccoli and pumpkin

Ingredients

  • 150 grams of brown rice.
  • 40 grams of wild rice.
  • A branch of broccoli.
  • 1 small pumpkin.
  • 20 grams of unroasted peeled almonds.
  • A handful of raisins.
  • Sea salt.
  • Olive oil.
  • You can also add soy sauce.

Elaboration

  1. We start by washing the wild and brown rice well, and then cook it for 45 minutes with the pumpkin, the peeled almonds and a pinch of sea salt. Let it rest for a few minutes.
  2. Now we boil the broccoli with water for 5 minutes. Then we will drain it well.
  3. Next, we will sauté the broccoli with olive oil and soy sauce.
  4. Finally, we mix everything already with the cooked rice and the pumpkin. Add the raisins and you will get a dish that is as original as it is healthy.

Pumpkin broccoli pudding

Ingredients

  • A small broccoli.
  • A tender onion.
  • An Apple.
  • 300 grams of pumpkin.
  • 3 eggs.
  • 2 tablespoons of olive oil.
  • 1 tablespoon of flour.
  • 1 splash of skim milk.
  • Salt, parsley and pepper.

Elaboration

  1. We will start by steaming the broccoli. After this, we must grate the pumpkin into very thin strips and cut the apple into thin slices
  2. Once this is done, we must preheat the oven to 200 degrees.
  3. Now, in a frying pan and with oil, we will sauté the finely chopped onion, as well as the parsley.
  4. In a bowl we will beat the eggs until they are foamy, and later, introduce the broccoli in bunches, the grated pumpkin, the onion sautéed in oil, as well as the chopped apple.
  5. After this, we will salt and pepper and add  a splash of skimmed milk previously mixed with the flour.
  6. We will take a tray or the mold that we want for the oven  (this will be the final shape of the pudding) and we will spread it in butter. After, we must pour the mixture of all the previous ingredients.
  7.  We will put it in the oven for 20 or 25 minutes. Let it cool and, finally, we will unmold. You can accompany this tasty pudding with a vinaigrette.
