  • 300 g of squid.
  • 100 g of flour.
  • 1 egg.
  • The zest of ½ lemon.
  • Salt.

  • First, wash the squid well, cut them into thin rings and put them to drain (the ideal would be to do it on a kitchen towel so that it better absorbs the water).
  • Meanwhile, we prepare the batter by putting flour in a container and the beaten egg in another. For the squid to have more flavor, you can put the lemon zest and salt together with the flour and mix them.
  • The next thing will be to coat the squid. That is, go one by one passing them first through the flour mixture and then through the egg and put them on a plate.
  • Then, put plenty of oil in a pan and when it is hot enough, fry the squid.

Ingredients:

  • 4 egg yolks.
  • ½ liter of milk.
  • 125 g of sugar.
  • 20 g of flour or starch.
  • The peel of a lemon.
  • Ground cinnamon to taste

preparation:

  • First, put ¾ parts of the milk in a saucepan with the cinnamon and lemon and heat the mixture until it comes to a boil.
  • Meanwhile, beat the yolks, flour and the rest of the milk and add to the previous mixture.
  • Then, put on a low heat and stir occasionally until it thickens.
  • Finally, let it cool for a while before serving.

2. Caper sauce

  • 2 tablespoons of capers.
  • 1 spring onion.
  • 2 egg yolks.
  • 100 ml of oil.
  • 1 tablespoon of mustard.

  • Salt.
  • Tabasco to taste.

  • First, beat the yolks with the mustard.
  • Then add the oil little by little while stirring.
  • Third, add the cream, salt, chopped chives, capers, and tabasco if desired.
