Neapolitan spaghetti recipe
Ingredients:
- 1 kg of spaghetti
- 2 kg and ½ of ripe tomato
- 3 tablespoons olive oil
- 3 garlic cloves
- ½ onion
- 1 teaspoon minced oregano
- 1 teaspoon of sugar
- 2 tablespoons basil leaves
- Salt and pepper
- Parmesan cheese to taste
preparation:
- In a large saucepan, heat salted water and a splash of oil. Once it boils, add the pasta and cook it for 10 minutes (or whatever the package says). Set it aside, after draining it well.
- Boil the tomatoes in hot water for 5 minutes. Remove and peel them. Remove the seeds and cut them as finely as possible.
- Chop the garlic and onion finely and fry them in a saucepan until the second is transparent.
- Add the tomatoes and, when it starts to boil, lower the heat.
- Season the preparation to taste and add the oregano and sugar. Cover and cook for 2 more minutes. Add the basil towards the end.

Data of interest:
- If you add a splash of olive or sunflower oil when boiling the water for the pasta, the pasta sticks less to each other when it cooks.
- The best variety of tomato to make this recipe is the pear tomato, because it is slightly harder and can be chopped better, apart from its more intense flavor.

Neapolitan spaghetti recipe
Ingredients:
- 500 g of spaghetti
- 50 ml olive oil
- 1 large onion
- 2 cloves of garlic
- 6 fresh tomatoes
- 3 basil leaves
- Grated cheese to taste
preparation:
- Chop the onion into small cubes, the garlic into small cubes and the tomato as finely as possible.
- In a large saucepan, bring the water to a boil with a pinch of salt and a drizzle of oil.
- Add the spaghetti and cook for 12 to 15 minutes or until “al dente”.
- Once ready, run them under cold water to slow down the cooking and drain well.
- In another saucepan, heat the rest of the oil, add the onion and fry it until it is transparent. Add the garlic and tomato and mix for 2 minutes.
- Put the saucepan over medium heat and add the basil leaves. Let cook for 15 more minutes.
- Serve the pasta with the sauce on top and sprinkle with plenty of grated cheese. It gives for 4 people.
